Dill in United States

Dill seed is the dried fruit of an annual belonging to the parsley family (Umbelliferae), along with carrot, celery, fennel and parsley.  Dill is grown extensively in temperate areas such as the United States, Canada, Central Europe and India.

In the United States dill is grown primary in the North Central states and in the Pacific Northwest (Oregon and Washington) and in Nevada, but it can be raised almost everywhere, including Florida.

Parts used are the dried ripe fruit (commonly called ‘seed’) and the whole above ground herb (dill herb) harvested immediately before the fruits mature or for best quality, before flowering.

In addition to seeds, the leafy tops are also used and are referred to as dill weed. Dill weed produced in the United States is preferred in Europe because of its flavor and bright green color.

Dill weed oil, the essential oil is obtained by steam distillation of the fresh herb (stalks, leaves and seeds). American dill weed has a strong, fresh, somewhat spicy, aromatic odor and a warm, slightly burning taste.
